Carron Lodge are a family run business which produce over 30 varieties of cheese at Carron Lodge. All of their cheeses are pasteurised, heating the milk to 72.5°C, to ensure that harmful bacteria are destroyed. The milk is then cooled in the open vats to 32°C, where starter cultures and rennet are added.
